Salmon/trout’s roe are called Sujiko. It’s Sujiko while it’s still in the ovarian membrane and it is called Ikura after being removed from the membrane.

How to remove Sujiko from the membrane

  • Dissolve 1/2 teaspoon of salt in a bowl of warm water about 40°C

  • Place the Sujiko in the warm water and gently torn the membrane apart to separate it from the Ikura

  • Drain the Ikura in a colander after that.
