Simmered Daikon with Minced Meat
Flavorful dish with warm creamy minced meat sauce
A while back, I was watching a Japanese series and saw a dish called Ankake Daikon.
With no explanation provided on-screen, I was left to imagine its flavor; the thick, glossy sauce topped with minced meat and spring onions was so striking that I even wondered if it involved rice cakes.
I eventually discovered that Ankake is a versatile, thickened sauce that coats the produce rather than pooling at the bottom of the plate like a thin gravy.
There is something satisfying about this texture - it ensures the flavor actually sticks to the food without relying on heavy, sugary syrups.
While I’ve always wanted to incorporate more daikon into my diet, I’ve often struggled with how to prepare it.
