Kamatama Udon かまたまうどん

Kamatama udon is the udon variation of the popular “egg over rice” dish. This recipe is well-known in Kagawa Prefecture, which is the birthplace of Sanuki udon.
To make it, all you need to do is whisk an egg and combine it with dashi soy sauce (you can also use mentsuyu or regular soy sauce) in a bowl. Then, add in hot udon noodles and give it a good stir. If you happen to have frozen udon that can be microwaved, this dish becomes a quick and easy option, even when you’re not feeling your best.
Ankake udon あんかけうどん

Ankake udon noodles offer a comforting and hearty dish. They’re prepared by simmering your preferred udon broth and thickening it with water-dissolved potato starch. This creates a warm and satisfying meal that settles well in the stomach.
For an added nutritional boost, you can beat some eggs and stir them into the mixture after it thickens. This won’t cause any discomfort during digestion and provides essential protein.
Tanuki Udonたぬきうどん

Classic Tanuki Udon is a delightful dish with a crispy twist from the delicious tenkasu. While simple, it boasts a satisfying blend of ingredients like tenkasu, wakame, boiled eggs, and spring onion served in mentsuyu and dashi based soup, ensuring a hearty and filling meal in one bowl.
Tenkasu 天かす, or Agedama 揚げ玉, are crispy bits made from leftover tempura batter, giving an extra satisfying crunch to your meal.
Kitsune Udonきつねうどん

Kitsune Udon offers soothing relief for those feeling unwell or experiencing stomach upset. This traditional Japanese dish combines udon noodles in a gentle dashi soup, complemented by tender slices of aburaage (sweet, marinated tofu pouches) and topped with refreshing spring onions. It's comforting flavors and light textures make it a perfect choice to ease discomfort and nourish your body.
